Coffee from Vietnam doesn't show up on most specialty menus. When it does, it tends to be Robusta or a sweetened blend, not a delicate single origin from the highlands. White Lotus is the quieter side: washed Catimor from Lam Dong province, where volcanic mountain soil and elevation produce cup characteristics locals describe with a single word: jade.

Lam Dong sits in Vietnam's southern highlands. Bodhi's export partners work alongside Sustainable Management Services to support local growers in best-practice agriculture, and the region has steadily climbed into the conversation as one of the country's highest-quality specialty zones.

Washed Process: Ripe cherries are depulped and washed clean, then sun-dried as long as the weather allows before finishing in mechanical driers. The traditional washed approach is what gives the green coffee its jade color, and what sets the cup up for a chocolatey base with floral aromatics and citrus acidity.

Cupping notes: Drinks more like a tea ceremony than a coffee. Earl Grey leads with citrus and floral. Lemon brightens the middle. Black cherry rounds it out. Mellow body, smooth finish, surprisingly delicate for a coffee from a country better known for the opposite.

Resting: Best 14+ days after roast. This washed Catimor opens up around the two-week mark and holds steady for several weeks past.

Best brewed as: Pour over and auto-drip pull the floral and citrus notes forward. Could be a challenge as espresso, as citrus souring and bittering notes will amplify.
