Merly Leon farms 12 hectares of coffee on Finca El Churaz, sitting at 2,050 meters above sea level in the Queromarca community of Cajamarca's Callayuc district. At that altitude, cool mountain air and hard sunshine slow everything down. Cherries take their time, complexity builds, and the coffee that comes out the other end carries the mountain with it.

Merly is a member of Aromas del Valle, an association of small producers founded in 2015 in the Cajamarca region of northern Peru. The name translates to "Scents of the Valley," and that feels right. The organization was built around the belief that coffee should carry a place, and that farmers should be known for the work they do. Over recent seasons, Aromas del Valle has invested seriously in fermentation training, giving producers the tools to get more complexity out of their processing and, in turn, more value for their harvest.

This lot is certified organic. Merly manages her land the way small farmers in this region have always managed it, without synthetic inputs, tending it with the kind of care that doesn't show up on a label but absolutely shows up in the cup.

Washed Process: Before washing, the whole cherries go into sealed fermentation tanks for 48 hours. This extended anaerobic stage lets the sugars and microorganisms do their work, building depth and layered complexity. Then the coffee is fully washed and dried in the sun, which cleans everything back up and lets that brightness come through.

Cupping notes: Red grape and dried fruit up front, with a chocolate biscuit sweetness that holds through the finish. The anaerobic fermentation gives it real depth without muddying the cup. Bright, clean, and structured. This is the kind of coffee that works at every brew method and keeps rewarding you the more you drink it.
