Ivan Solis grew up in coffee. He spent years at CoopeDota, one of Costa Rica's larger cooperatives, learning to read quality from green to cup. In 2017 he and his family scraped together what they had: savings, some financing, a lot of grit, and built Solis & Cordero Micro Mill in the Los Santos region.

The mill is more than a business. It's a place to teach his children what earning and living actually look like, and a place where the surrounding small farms can bring their cherries and get their coffee processed with care. Many of those producers were people Ivan met as a young man working receiving stations. He remembered.

Natural + Anaerobic Fermentation: After ripe cherries are hand-picked, they're floated to remove the low-density ones. The keepers go into sealed tanks with mosto, the coffee juice and yeast carried over from a previous fermentation, and ferment without oxygen for 144 hours. The cherries then dry intact for another 48-hour finish ferment. The result is a cup that takes the deep fruit you expect from a natural and pushes it somewhere stranger and more tropical.

Cupping notes: Bright lemon up front. Green grape juiciness through the middle. A wild streak of dragon fruit. Bodhi's call, and we hear it. White tea on the back end keeps the whole thing from getting heavy. Distinctive, clean, a little risky in the best way.

Resting: Best 14+ days after roast. Anaerobic naturals reward patience. This one will keep getting more interesting for weeks past the two-week mark.

Best brewed as: Pour over and auto-drip. Also pulls beautifully as espresso for those running lighter roasts on bar.
